Who We Are

Palato Chocolate is a Honduran bean-to-bar chocolate company — founded and led by women — established in 2007 by Chef Mónica Pedemonte (Chef Moni). After completing her studies in Communications and Business Administration in the United States, she pursued a specialization at the prestigious Mausi Sebess Culinary Arts Institute in Buenos Aires, Argentina. In 2018, she deepened her knowledge of the bean-to-bar chocolate-making process in Eugene, Oregon, and San Francisco, California. Later, in 2019, she earned her certification as a Chocolate Taster from the International Institute of Chocolate & Cacao Tasting in London, England.

Our story began by offering high-end catering services for private and corporate clients, featuring gourmet dishes and fine pastries. Over time, our passion for exceptional flavors led us to focus on one of Honduras’ most treasured resources: its world-class cacao.

Awards & Recognitions

Our products are made entirely from Honduran raw materials. The high-quality cacao, sourced from natural plantations in the Wampusirpi area of the Honduran Mosquitia, is carefully selected, roasted, and processed to create our diverse range of premium chocolates.

Over the past two years, Palato Chocolate has been recognized at both the American and international levels, earning 15 silver and bronze medals from the International Chocolate Awards.

With great pride, our products are now being sold in Honduras, France, and the United States, establishing our chocolate brand and Honduran cacao as products of the highest quality worldwide.
