About Us

Who We Are

Palato Chocolate is a Honduran bean-to-bar chocolate company — founded and led by women — established in 2007 by Chef Mónica Pedemonte (Chef Moni). After completing her studies in Communications and Business Administration in the United States, she pursued a specialization at the prestigious Mausi Sebess Culinary Arts Institute in Buenos Aires, Argentina. In 2018, she deepened her knowledge of the bean-to-bar chocolate-making process in Eugene, Oregon, and San Francisco, California. Later, in 2019, she earned her certification as a Chocolate Taster from the International Institute of Chocolate & Cacao Tasting in London, England.

Our story began by offering high-end catering services for private and corporate clients, featuring gourmet dishes and fine pastries. Over time, our passion for exceptional flavors led us to focus on one of Honduras’ most treasured resources: its world-class cacao.

Mission

We transform Honduran cacao into world-class premium chocolate, blending tradition, sustainability, and artisanal excellence. We work hand in hand with local producers to boost the economy, protect the environment, and create unique experiences that celebrate Honduras’ heritage and flavor.

Our vision is to be a benchmark of quality, innovation, and sustainability, not only in Honduras but also across the Americas and internationally.

Our goals are to:

  • Continuously elevate and diversify our chocolate offerings.

  • Strengthen Honduras’ reputation as a source of world-class cacao.

  • Personalize the customer experience for each market.

  • Promote the growth and modernization of cacao cultivation in Honduras, improving the lives of thousands of producers and contributing to the nation’s economic development.

Awards & Recognitions

At Palato Chocolate, every bar begins with the richness of Honduran soil and the dedication of hands that nurture it. Our chocolates are crafted entirely from locally grown cacao — carefully selected, roasted, and refined to reveal its pure, natural character.

Each creation reflects our love for the craft and our commitment to sharing the authentic taste of Honduras with the world.

Between 2018 and 2021, Palato Chocolate was honored with 15 silver and bronze medals from the International Chocolate Awards — a recognition that celebrates not only our chocolate but the people and land behind it.

Today, our award-winning chocolates are enjoyed in Honduras and United States, carrying with them a story of origin, artistry, and pride.
