About Us
Palato Chocolate is a Honduran bean-to-bar chocolate company — founded and led by women — established in 2007 by Chef Mónica Pedemonte (Chef Moni). After completing her studies in Communications and Business Administration in the United States, she pursued a specialization at the prestigious Mausi Sebess Culinary Arts Institute in Buenos Aires, Argentina. In 2018, she deepened her knowledge of the bean-to-bar chocolate-making process in Eugene, Oregon, and San Francisco, California. Later, in 2019, she earned her certification as a Chocolate Taster from the International Institute of Chocolate & Cacao Tasting in London, England.
Our story began by offering high-end catering services for private and corporate clients, featuring gourmet dishes and fine pastries. Over time, our passion for exceptional flavors led us to focus on one of Honduras’ most treasured resources: its world-class cacao.
We transform Honduran cacao into world-class premium chocolate, blending tradition, sustainability, and artisanal excellence. We work hand in hand with local producers to boost the economy, protect the environment, and create unique experiences that celebrate Honduras’ heritage and flavor.
